Ingredients are listed by weight. This index records FDA status and a CSPI rating where one exists, then counts its own flags. The safety score is that flag count, not a nutrition assessment.

Ingredient List Order Matters
FDA regulations require manufacturers to list ingredients in descending order by weight. The first ingredient makes up the largest proportion of the product, and the last ingredient makes up the smallest. This is the single most important principle for reading food labels.
When you see a concerning ingredient listed near the end, the quantity is likely very small. When you see it near the top, the product contains a significant amount. This context matters when evaluating safety, dose determines the risk for most substances.

Understanding FDA Regulatory Status
Not all food ingredients are regulated the same way. The FDA classifies food substances into several categories, each with a different level of scrutiny:
GRAS, Generally Recognized As Safe
GRAS substances are considered safe based on a long history of common use in food (pre-1958) or on published scientific evidence. Examples include salt, vinegar, baking soda, and many spices. The GRAS designation means experts have concluded the substance is safe under its intended conditions of use.
However, GRAS is not a guarantee of safety in unlimited quantities. It means the substance is safe as typically used in food manufacturing. The GRAS system has also been criticized because manufacturers can self-certify their ingredients as GRAS without mandatory FDA review.
Approved Food Additives
Substances that are not GRAS must go through the FDA's food additive petition process. This requires manufacturers to submit scientific evidence of safety. Approved additives have undergone formal review and have specific conditions of use (allowed quantities, types of food, etc.).
An approved additive is not necessarily more or less safe than a GRAS substance, it simply means its safety was evaluated through a different regulatory pathway.
Color Additives
Color additives have their own regulatory framework. Certified colors (like FD&C Red 40) must be batch-tested by the FDA. CSPI Safety Ratings Explained
The Center for Science in the Public Interest (CSPI) maintains the Chemical Cuisine database, an independent, peer-review-based assessment of food additive safety. PlainFoodSafe incorporates CSPI ratings into our safety scoring. Their ratings include:
- Safe - No known health concerns based on current evidence
- Caution - Some evidence of minor concerns; may warrant limiting intake
- Cut Back - Scientific evidence suggests reducing consumption is prudent
- Certain People Should Avoid - Known to cause reactions in sensitive individuals
- Avoid - Strong evidence of health concerns; should not be in the food supply
CSPI's ratings are independent of the FDA and are sometimes more conservative. When an ingredient has a CSPI "Avoid" rating but an FDA "GRAS" status, it often indicates that newer research has raised concerns not yet addressed by regulatory action.
How PlainFoodSafe Safety Scores Work
Every product in our database receives a safety score from 0 to 100. The score is calculated algorithmically based on four factors:
- FDA regulatory status of each ingredient (GRAS, Approved, Listed, Prohibited)
- CSPI safety ratings from peer-reviewed toxicology research
- Presence of flagged ingredients - 26 substances with documented concerns (synthetic dyes, controversial preservatives, banned substances)
- Number and severity of ingredient concerns in the product
A score of 90-100 means no flagged ingredients and all ingredients have favorable safety profiles. A score of 50-69 indicates multiple ingredients with concerns. Below 50 means significant safety concerns are present.

What to Watch For on Labels
Across the 894,137 product records in this database, these are the most frequently recorded patterns:
- Synthetic dye names - Red 40, Yellow 5, Yellow 6, Blue 1, Red 3 (being phased out)
- BHA and BHT - Preservatives classified as possible carcinogens by international agencies
- Sodium nitrite - Common in processed meats; linked to colorectal cancer risk
- Potassium bromate - Banned in California and many countries; sometimes found in baked goods
- Brominated vegetable oil (BVO) - FDA revoked authorization in 2024
- Propylparaben - Endocrine-disrupting preservative banned in California food products
- Titanium dioxide - Banned as a food additive in the EU since 2022

How to Check a Label Against This Database
- Compare within one category - Rankings place products of the same type on one scale, which is the only comparison the score supports: a cereal and a cooking oil are scored on different additive profiles
- Count the additives, not the line length - The score reflects which additives are present and how CSPI and the FDA rate them, not how long the list is. A short list containing a flagged additive scores below a longer list of unflagged ones
- Check the brand profile - Some brands score consistently higher across their range. Brand profiles carry the average safety score across every product recorded for that brand
- Scan barcodes - Searching by barcode returns the recorded score and the additive list for that exact formulation
- "Natural flavors" is not itemised - The term is a regulatory category that can cover many substances, so the additives behind it do not appear in the list this score is computed from
